Pasta:

Spaghetti (or other favorite long noodle) and cook per packaging

While cooking the pasta, prepare the pesto, in food processor, to quantity and taste -

fresh basil
chopped walnuts
fresh ginger
sea salt
olive oil
garlic
black pepper
1 lemon, zest & juice
Bragg (bragg.com) Nutritional yeast seasoning
Parma (eatparma.com) vegan parmesan

Salad:

Dressing, combine the following to quantity and taste -

vegan yogurt
vegan buttermilk (1/2 vegan sour cream + 1/2 water + dash of lemon juice)
agave
sea salt
black pepper

Salad & garnish -

small grapefruit, peel rind and membrane then separate segments
2 small avocados, sliced
2 heads butter leaf lettuce, roughly chopped
fresh mint leaves, garnish

Bread (made ahead in bread maker):

White Italian seasoning, sun dried tomato & mozzarella bread slices
Kite Hill (kite-hill.com) truffle, dill & chive artisan cheese

Combine together to quantity and taste -

Salad:

Combine together to quantity and taste -

Pecans

What is needed (Products are suggestions, substitute as needed):

6 Trader Joe's (traderjoes.com) organic red bell peppers
1 tablespoon olive oil
1 Trader Joe's organic small yellow onion
1 package 365 (wholefoods.com) organic long grain brown & wild rice
12 Trader Joe's organic cherry tomatoes
2 Trader Joe's garlic cloves
1 can Trader Joe's organic chickpeas
1 can Trader Joe's organic red kidney beans
1 jar Trader Joe's fired roasted tomato salsa
1/4 cup Trader Joe's organic peanut butter
1 can minced jalapenos
1 teaspoon Trader Joe's light brown sugar
1/2 cup Mott's 100% apple juice
fresh thyme
fresh parsley
smoked paprika

What to do:

Oven to 350 Degrees
Slice tops of peppers
Remove seeds & membranes from peppers, discard
Scald peppers in boiling water till slightly softened, then set aside and drain.
Chop pepper tops and set aside.
Heat oil in large skillet over medium heat, then saute the onion, chopped pepper tops, and cook until softened, about 5 minutes.
In a large bowl, mix will the onion & pepper mixture with rice, beans, salsa, peanut butter, jalapenos, parsley, sugar, salt, and pepper.
Fill pepper cavities with rice mixture and place in oven dish
Add the apple juice to the oven dish, cover lightly with foil, and bake about 40 minutes

A simple vegan hack: repurpose leftover garbanzo spread from work party. Added chopped salad mix, diced tomato, diced onion, minced garlic and olives. Add seasoning & spices to preference. Served on flat bread olive oil brushed and oven toasted.

Serves two to four depending on hunger level. I like oven toasting the veggie-balls as it adds more texture.

1 package Trader Joe's (traderjoes.com) meatless meatballs
1 package Stahlbush (wholefoodsmarket.com) cool cauliflower
1 package Jacobs Farm (wholefoodsmarket.com) organic pasta mix herbs
1 package Monterrey ArtiHearts (wholefoodsmarket.com)
1 jar Victoria Vegan (wholefoodsmarket.com) artichoke vegan Alfredo sauce
1 package Pasta Partners (homegoods.com) rainbow angel hair pasta

What was done:

  1. Toss the meatballs in olive oil and paprika, then cook via oven method.
  2. Finely chop the herbs
  3. Combine the cauliflower, herbs artichoke hearts and Alfredo sauce in a pot. Bring to boil then immediately reduce to simmer.
  4. Cook the pasta per package instruction.
  5. Drain pasta when cooked and toss with olive oil.

Plating:

1. Pasta
2. Sauce
3. Veggie-Balls

1 package Saffron Road (wholefoodsmarket.com) Lemongrass Basil Simmer Sauce
1 package Seeds of Change (wholefoodsmarket.com) Organic Brown Basmati Rice
1 package Gardein (wholefoodsmarket.com) Golden Fishless Filets
1 small red onion
1 small red potato
Frontier Co-op (wholefoodsmarket.com) Organic Curry powder

What was done:

  1. Cook the veggie fish via oven method.
  2. Chop the onion and the potato and saute.
  3. Add the simmer sauce to the saute onion & potato, set burner to simmer.
  4. Chip the veggie fish when done.
  5. Add the cooked veggie fish to sauce mix.
  6. Add the curry powder to taste to the mix.
  7. Cook the rice via package method.

Plating:

  1. Rice

Mediterranean Risott
Trader Joe's (traderjoes.com) Grilled Asparagus Spears
Red Fork lemon asparagus seasoning sauce
Leftover Roma tomatoes, red onion, shallots & salad greens

What I did:

Cook the Risott via instructions
Cook the Grilled Asparagus with seasoning sauce via instructions
Pan grill tofu
Chop greens, tomatoes, onions, and shallots and combine in bowl

Plating:

Toss salad mix with vinaigrette
Place tofu steak on Risott
Place asparagus on side

Victoria Vegan Alfredo artichoke sauce
Trader Joe's tapenade spread
Whole Foods Market vegan Caesar dressing

What I did:

Cook past via instructions
Combine cauliflower, ricotta, and sauce in pot bring to boil then reduce to simmer
Prepare salad and dress with vegan caesar dressing
Toasted olive oil brushed bread slices

Dressing:

Combine sauce and pasta then plate
Add salad mix/dressing
Top toast with tapenade

1 can Trader Joe's (traderjoes.com) organic tomatoes diced & fire roasted with green chilies
1 can Trader Joe's cuban style black beans
1 can Trader Joe's organic kidney beans
1 package Trader Joe's chicken-less strips
1 package Trader Joe's soy shredded cheddar
1 jar Trader Joe's cowboy caviar (salsa)
1 package Trader Joe's organic corn chip dippers
(plus anything missing from the staples list)

Fridge/Pantry Staples:

Olive oil
Trader Joe's South African Smoke seasoning blend

What to do:

Drain beans in colander (do not rinse) and set aside
To a 4 quart pot add a drizzle of olive oil
Cut chicken strips into bit size cubes and place in pot
Saute cubes in pot over medium heat until golden brown, be careful no to over cook
Add tomatoes, cowboy caviar, and beans to pot with sauteed cubes
Add african smoke seasoning to taste
Bring to boil then reduce to simmer, 10 min

Plate:

2 large serving bowls
Partially fill each bowl with chips
Spoon chili on top of the chips
Top with cheddar shreds

Setup:

preheat oven per enchilada package instructions
2 qt casserole dish and lightly drizzle bottom with oil

What to do:

Combine and well mix/fold both the quinoa/rice and chili in the dish adding seasoning to taste preference
Smooth the mixture out
Place the unwrapped enchilada dinners side by side on top of mixture
Coat well with drizzled oil and top generously with cheese blend
Cover dish and cook per enchilada package instructions, allowing for 2 packages, 5-10 min extra
Cool, drizzle with enchilada sauce, then serve

Two packages Whole Foods (wholefoodsmarket.com) 365 Vegan Lasagna frozen dinners
1 package Tommy's Super-Foods (tommyssuperfoods.com) seasoned super greens (freezer isle)

Pantry:

Olive oil
Frontier Co-Op (frontiercoop.com) Italian spice seasoning
Bragg (bragg.com) nutritional yeast
Heirloom tomatoes
Vegan mozzarella, shredded

Set up:

Preheat oven per lasagna instructions
2 qt casserole dish and lightly drizzle bottom with oil

What to do:

Toss the super greens and heirloom tomatoes with olive oil and Italian seasoning
Place and spread supper greens in bottom of 2 qt casserole dish
Place unwrapped lasagna side by side on top of super greens
Drizzle with oil and sprinkle  with generous amount of shredded vegan mozzarella
Cover dish and cook per lasagna package instructions, allowing for 2 packages, 5-10 min extra
Cool, sprinkle generously with Bragg nutritional yeast, then serve

Serves 18-24

1 package Bona Dea (bonadeaglutenfree.com) outrageous oat cookies mix
1 package Whole Foods (wholefoodsmarket.com) dried cranberries
1 jar The Spice Hunter (spicehunter.com) crystallized ginger
(plus anything missing from the staples list)

Fridge/Pantry Staples:

Coconut oil
Agave syrup

Setup:

1 package cooking mix
1/2 cup Coconut oil, melted
1/4 cup water, room temp
3/4 cup cried cranberries
1/4 cup crystallized ginger
line cookie sheet/pan with parchment paper
preheat oven 350 degrees

What to do:

Empty cookie mix into large mixing bowl
Add oil and water to mix
Stir and fold mixture until all of dry mix is moist
Add cranberries and ginger to mixture
Stir and fold until well spread through mixture
Scoop into small rounds and place 1" apart on cookie sheet/pan
Bake for 10-12 minutes, Rotate pan, back for another 10-12 minutes or when lightly golden.
Cool

Appetizer:

1 package Trader Joe's (traderjoes.com) meatless meatballs: toss with smoked paprika & olive olive then cook via oven method.
1 tub Trader Joe's fresh cranberry orange relish

The oven back method adds a nice crispy surface. Unlike the picture I would, in the future, place the balls in the sauce with the toothpicks.


Entree & Side:

Oven -
1 Trader Joe's breaded turkey-less stuffed roast with gravy using the oven method.
6 Trader Joe's organic Fiji apples
4 Trader Joe's organic sweet potatoes

The last 20 min of roast cooking, remove the foil, for a crispy surface,and add the apples & sweet potatoes for the duration of the roasts cooking cycle.

Side-
Split the sweet potatoes and garnish with the crushed kettle chips
1 Trader Joe's turkey and stuffing seasoned kettle chips

Vegetable-
