2015.09.19 Pasta; Alfredo Artichoke Pasta w/Veggie-balls

Serves two to four depending on hunger level. I like oven toasting the veggie-balls as it adds more texture.




What was used (Products are suggestions, substitute per need/want):
1 package Trader Joe's (traderjoes.com) meatless meatballs
1 package Stahlbush (wholefoodsmarket.com) cool cauliflower
1 package Jacobs Farm (wholefoodsmarket.com) organic pasta mix herbs
1 package Monterrey ArtiHearts (wholefoodsmarket.com)
1 jar Victoria Vegan (wholefoodsmarket.com) artichoke vegan Alfredo sauce
1 package Pasta Partners (homegoods.com) rainbow angel hair pasta

What was done:

  1. Toss the meatballs in olive oil and paprika, then cook via oven method.
  2. Finely chop the herbs
  3. Combine the cauliflower, herbs artichoke hearts and Alfredo sauce in a pot. Bring to boil then immediately reduce to simmer.
  4. Cook the pasta per package instruction.
  5. Drain pasta when cooked and toss with olive oil.

1. Pasta
2. Sauce
3. Veggie-Balls
