2015.11.15 Pasta; Pesto Spaghetti with Salad & Bread


Pasta:

Spaghetti (or other favorite long noodle) and cook per packaging

While cooking the pasta, prepare the pesto, in food processor, to quantity and taste -

fresh basil
chopped walnuts
fresh ginger
sea salt
olive oil
garlic
black pepper
1 lemon, zest & juice
Bragg (bragg.com) Nutritional yeast seasoning
Parma (eatparma.com) vegan parmesan

Salad:

Dressing, combine the following to quantity and taste -

vegan yogurt
vegan buttermilk (1/2 vegan sour cream + 1/2 water + dash of lemon juice)
agave
sea salt
black pepper

Salad & garnish -

small grapefruit, peel rind and membrane then separate segments
2 small avocados, sliced
2 heads butter leaf lettuce, roughly chopped
fresh mint leaves, garnish

Bread (made ahead in bread maker):

White Italian seasoning, sun dried tomato & mozzarella bread slices
Kite Hill (kite-hill.com) truffle, dill & chive artisan cheese
