2015.12.08 Enchilada; Quick Black Bean & Vegetable Enchiladas w/Quinoa & Brown Rice

Shopping cart (Products are suggestions, substitute per need\want):

2 packages Amy's (amys.com) vegan enchilada black bean vegetable frozen meals
1 package Seeds of Change (seedsofchangefoods.com) quinoa & brown rice w/garlic (rice isle)
1 can Amy's organic chili medium w/vegetables
1 package Follow Your Heart (followyourheart.com) vegan gourmet shreds fiesta blend cheddar & pepper jack
(plus anything missing from the staples list)

Fridge/Pantry Staples:

Olive oil
Mexican spice seasoning
Sky Valley (organicvillefoods.com) Enchilada Sauce

Setup:

preheat oven per enchilada package instructions
2 qt casserole dish and lightly drizzle bottom with oil

What to do:

Combine and well mix/fold both the quinoa/rice and chili in the dish adding seasoning to taste preference
Smooth the mixture out
Place the unwrapped enchilada dinners side by side on top of mixture
Coat well with drizzled oil and top generously with cheese blend
Cover dish and cook per enchilada package instructions, allowing for 2 packages, 5-10 min extra
Cool, drizzle with enchilada sauce, then serve
