2015.12.22 Chili; 'Chicken' Chili w/Cuban Style Black Beans & Cowboy Caviar

One stop shopping at it's best. Quick easy, home in no time, and dinner in less than 30 minutes!

Shopping cart (Products are suggestions, substitute per need\want):

1 can Trader Joe's (traderjoes.com) organic tomatoes diced & fire roasted with green chilies
1 can Trader Joe's cuban style black beans
1 can Trader Joe's organic kidney beans
1 package Trader Joe's chicken-less strips
1 package Trader Joe's soy shredded cheddar
1 jar Trader Joe's cowboy caviar (salsa)
1 package Trader Joe's organic corn chip dippers
(plus anything missing from the staples list)

Fridge/Pantry Staples:

Olive oil
Trader Joe's South African Smoke seasoning blend

What to do:

Drain beans in colander (do not rinse) and set aside
To a 4 quart pot add a drizzle of olive oil
Cut chicken strips into bit size cubes and place in pot
Saute cubes in pot over medium heat until golden brown, be careful no to over cook
Add tomatoes, cowboy caviar, and beans to pot with sauteed cubes
Add african smoke seasoning to taste
Bring to boil then reduce to simmer, 10 min

Plate:

2 large serving bowls
Partially fill each bowl with chips
Spoon chili on top of the chips
Top with cheddar shreds
