2017.09.03 "Beef" Fried Rice; Seitan, Baby Corn, Peas, Mushrooms, Yellow Onion, Carrot, Garlic


Shopping Cart (Products are suggestions, substitute per need\want):


2 8 oz. packages Yves Seitan Cubed
1 15 oz. can Corn, baby
1 15 oz. can Peas
1 4 oz. can Mushrooms, sliced
1 Yellow Onion, medium
1 Carrot, large
6 Garlic, cloves


(plus anything missing from the staples list)


Fridge/Pantry Staples:


Sesame Oil
Sea Salt, fine crystals
Pepper, ground
Sugar
Chinese 5 spice blend
Rice (your choice/preference)
‘Braggs’ (or Coconut) Liquid Aminos


'Mise En Place' (Bring all ingredients to room temperature):


2 tablespoons + 3 tablespoons ‘Braggs’, separate.
1 ½ cup uncooked rice
Water for cooking rice (see package instructions)
2 cups water
½ teaspoon sugar
3 tablespoons sesame oil
1 teaspoon Chinese 5 spice
6 cloves garlic, finely chopped
1 cup yellow onion, finely chopped
⅔ cup carrot, shredded
mushrooms, drained
corn, drained
peas, drained
1 saucepan, medium, for rice cooking
1 saucepan, small
1 skillet, large high sided


Cooking:
  1. In the medium sauce pan, cook the rice per package instructions, avoid adding salt or margarine/butter.
  2. In the small sauce pan combine the 2 cups water, sugar, 2 tablespoons liquid aminos, and chinese 5 spine, then bring to boil.
  3. To the small sauce pan add seitan and reduce heat to simmer, stirring occasionally, 7-10 minutes.
  4. Strain the cooked “beef” with colander, and set aside.
  5. In the large high sided skillet, heat the sesame oil over medium heat.
  6. Add onion to skillet and saute 3-5 minutes (until translucent).
  7. Add garlic to skillet and saute 1-2 minutes (until fragrant).
  8. Add to skillet, the cooked rice, “beef”, carrots, peas, baby corn, and mushrooms.
  9. Cook until 5-7 minutes (until thoroughly heated).


Plating:


Serves 4-6
